Roasted Street Corn Chicken & Avocado Salad

Creamy chicken salad with roasted corn dressing on an avocado half makes for the perfect low‑carb summer salad.

Ingredients
- 3 medium avocados
- (1) 10 oz. package Stonemill Kitchens Roasted Street Corn Dip
- 2 limes; 1 juiced, 1 sliced for garnish
- 1 bunch cilantro, washed and finely chopped (reserve a few leaves for garnish)
- 3 cups cooked rotisserie chicken, shredded
Directions
- In a medium‑sized bowl, place Stonemill Kitchens Roasted Street Corn Dip, lime juice, chopped cilantro, and shredded chicken.
- Mix with spoon until combined.
- Slice each avocado in half and remove pits.
- Spoon salad mixture on top of each avocado half.
- Garnish with cilantro leaves and lime slices.
